Raspberry balls (nut free)

1 cup raspberries (frozen, just thawed)
1 1/2 cups oats
2 tbsp maple syrup
1 tbsp coconut oil, melted
1 tbsp chia
1/2 desiccated coconut

Roll in coconut.

Granny’s nut-free balls

1 cup chopped dates
1 cup chopped dried apricots
1 cup rolled oats
4 tablespoons desiccated coconut
1 tablespoon water
2 teaspoons cocoa
¼ cup extra desiccated coconut (for rolling)

Blitz in a blender – you may need to add a touch more water if it’s not blending well.
Shape into balls and roll in coconut (if you want to).
Store in fridge or freezer.

General method for nut-based balls:

  1. Process nuts until desired texture (leave a bit chunky).
  2. Add everything else and process until combined.
  3. Roll into 1 tsp-ish balls (or bigger), then roll in coating.
  4. Store in fridge or freezer.

Cardamom and orange date balls

  • 1 cup almonds
  • 2 cups pitted dates (can include some dried figs) soaked in water for 10+ minutes, drained and chopped. Fresh medjool dates are fine as is.
  • 3-4 tsps orange rind
  • 1/2 tsps ground cardamom

Roll in desiccated coconut

Raw cacao prune balls

  • 1 cup raw almonds
  • 1 cup pitted prunes roughly chopped
  • ¼ cup raw cacao powder
  • ¼ cup goji berries
  • ½ teaspoon ground cinnamon

Em’s choc date balls

  • large handful almonds
  • 1 cup pitted dates soaked in water for 10+ minutes, drained and chopped. Fresh medjool dates are fine as is.
  • 1 cup desiccated coconut
  • 2 tbs cocoa
  • pinch salt
  • 1/2 to 1 tsp vanilla
  • 2 tbs coconut oil

Roll in extra desiccated coconut

Apricot balls

  • 2 handfuls raw cashews
  • 10 dried apricots
  • small handful raw pepitas
  • small handful sunflower seeds
  • 1/4 cup orange juice

Soak 1tbs chia (preferably white) in 1/4 cup water until gelled
1 cup dried apricots
1 cup oats
chia gel
1 tbsp honey (up to 2 tbsp if you like it sweet)
1 cup desiccated coconut.

Roll in coconut.
