Chimichurri

from Use it All

Blend:

  • 80g soft herbs (one or mix of coriander, parsley, dill)
  • 1/2 tsp cumin seeds
  • 1 garlic clove
  • 2 tbs red wine vinegar or sherry vinegar
  • 1/4 to 1/2 tsp salt
  • couple of tablespoons olive oil (to get it started blending)

When you have a paste, gradually add approx 100ml olive oil and continue blending. Taste and adjust with oil and/or salt.

Pour into a jar, cover with oil, and seal. Store in the fridge for up to 2 weeks.
