Sauce
- 1 clove garlic, minced
- 1 slice ginger, crushed
- 2 tbsp soy sauce
- 1 tbsp chilli oil or to taste
- 1 tbsp black vinegar
- 1 tsp sesame oil
- 1 tbsp sugar
- 1 tsp ground Szechuan peppercorns
- Some cold water if the sauce is too strong
Noodles
- 2 or 3 serves Udon or egg noodles (homemade pasta works great)
Garnishes
- Shredded veg: carrot, cabbage, cucumber, whatever you have
- Bean sprouts if you have them
- Chopped spring onion
- Shredded cooked omelette or poached chicken if you can be bothered
- Crushed peanuts or toasted sesame seeds
Cook the noodles, drain and cool under running water
Mix the sauce, pour over the noodles
Add the garnishes
Eat!
