Cold Szechuan Noodles

Sauce

  • 1 clove garlic, minced
  • 1 slice ginger, crushed
  • 2 tbsp soy sauce
  • 1 tbsp chilli oil or to taste
  • 1 tbsp black vinegar
  • 1 tsp sesame oil
  • 1 tbsp sugar
  • 1 tsp ground Szechuan peppercorns
  • Some cold water if the sauce is too strong

Noodles

  • 2 or 3 serves Udon or egg noodles (homemade pasta works great)

Garnishes

  • Shredded veg: carrot, cabbage, cucumber, whatever you have
  • Bean sprouts if you have them
  • Chopped spring onion
  • Shredded cooked omelette or poached chicken if you can be bothered
  • Crushed peanuts or toasted sesame seeds

Cook the noodles, drain and cool under running water

Mix the sauce, pour over the noodles

Add the garnishes

Eat!
