Jane’s Date Cake
- 2 eggs
- 1 cup sugar (Kate edit: I used less, and used a mix – 1/3 cup white caster sugar, 1/3 cup demerara)
- 3/4 cup oil
- 220gm date spread (1/2 box)
- 1 and 3/4 cups flour
- 2 tsp baking powder (1 packet)
- 1 tsp baking soda
- 0.5 tsp salt
- 1/2 tsp cinnamon
- 1 cup boiling water
Preheat oven to 180 degrees and line two loaf tins.
Mix all ingredients in order. Bake 30-40 mins (skewer test).
Kate note: I used date paste, not date spread – the paste was very solid, so I used about 3/4 of the cup of boiling water to soak & soften it before mixing in. Kept the last 1/4c water to add at end of mix. Approx 550-600g mix per loaf tin.
