Gingerbread (Pieta’s)

  • 3 cups plain flour (can be wholemeal, or a mix of wholemeal and plain, I like half/half)
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3 tsp to 1 tbsp ground ginger, depending on taste
  • 2 tsp bicarbonate of soda
  • 130 g butter chopped
  • 1/3 cup brown sugar
  • 1/2 cup golden syrup
  • 1 tsp vanilla
  • 1 egg

Combine ingredients in a bowl, knead until smooth.

Form dough into a disc and refrigerate at least 1 hour until chilled.

Preheat oven to 160C.

Roll out dough to ~5mm thick, cut into shapes & place onto tray lined with baking paper. Refrigerate 10min before baking.

Bake 10-12 mins until lightly golden.
