3 cups plain flour (can be wholemeal, or a mix of wholemeal and plain, I like half/half)
- 2 tsp ground cinnamon
1/2 tsp ground cloves
3 tsp to 1 tbsp ground ginger, depending on taste
- 2 tsp bicarbonate of soda
- 130 g butter chopped
1/3 cup brown sugar
1/2 cup golden syrup
- 1 tsp vanilla
Combine ingredients in a bowl, knead until smooth.
Form dough into a disc and refrigerate at least 1 hour until chilled.
Preheat oven to 160C.
Roll out dough to ~5mm thick, cut into shapes & place onto tray lined with baking paper. Refrigerate 10min before baking.
Bake 10-12 mins until lightly golden.
