- 1 and 1/2 cups mashed ripe banana (about 4 large)
- 1 tsp vanilla extract
- 2 cups rolled oats
- 3/4 to 1 cup dried fruit, to taste
- 1 cup nuts, chopped
- 1/2 cup sunflower seeds
- around 1/2 cup other additions e.g. cocoa nibs, hemp seeds, choc chips
- 1 tsp cinnamon
- 1/4 tsp fine salt
Preheat oven to 175C. Line a 23x33cm baking dish with baking paper.
Mash banana with a fork in a large bowl (make sure you have 1 1/2 cups). Add the vanilla and stir.
In a food processor, pulse oats until chopped but still textured. Stir oats into banana mix until fully incorporated.
Chop the dried fruit and nuts roughly (can pulse in food processor – do nuts and fruit separately), and stir into oat/banana mix along with the seeds, additional bits, cinnamon and salt.
Spoon mixture into the prepared tray/dish, with slightly wet hands flatten and compress.
Bake approx 25-35 mins until firm and lightly golden around the edges.
Cool in baking dish 10 mins, then gently lift out. Place the slab on a cooling rack until completely cool.
Slice into bars. Freezes well for 4-6 weeks (put baking paper between layers to freeze).
