Paleo porridge

  • 1 cup raw nuts (original recipes says walnuts)
  • 4 tbs chia seeds
  • 4 tbs pepitas
  • 8 tbs unsweetened shredded or desiccated coconut
  • 2 tbs flax seeds or flaxmeal
  • 1 tbs ground cinnamon
  • pinch salt
  • optional: 1 tsp gelatin

In a food processor, pulse nuts, chia and pepitas until roughly ground (how rough/fine is up to you).

Add remaining ingredients and pulse until ground and mixed.

To serve, combine approx 1/3 to 1/2 cup mix with equal amount of boiling water. Add more water if it’s too thick. (Original recipe says blend in processor with boiling water to make it creamy.)

Makes enough for 4-5 serves
