Polenta

  • 1 cup polenta
  • 1 cup water + some extra on standby
  • 1 cup veg stock (not too salty)
  • 1/2 cup grated parmesan
  • knob of butter

Bring the stock and 1 cup water to the boil. Add the polenta in a thin stream, stirring constantly.

Cook the polenta for about 10 mins, stirring the whole time. If at any time you think it’s too dry/thick/grainy, add a splash more water and keep cooking.

When it’s pretty much done (creamy, not grainy), stir in the parmesan and butter.
