Crust:
- 1 cup plain flour
- 1/2 tsp salt
- 1/4 cup very cold water
- 1/4 olive oil
- butter, for greasing
Filling:
- 4 eggs
- 2-3 tablespoons yoghurt (or cream or milk)
- grated cheese
- whatever else you want
Preheat oven to 180C and grease a 22cm quiche dish.
Mix flour and salt with a fork. Separately, mix oil and water.
Mix wet into dry with a fork until just combined, and press into quiche dish. Prick all over with a fork.
Bake approx 15min until slightly golden and dry (no need to use weights).
If there are any cracks, fill them with bread scraps.
Cool slightly, then fill with grated cheese then chosen fillings. Beat eggs with yoghurt/milk/cream and pour over the fillings (you might not need it all).
Bake 25-30mins until browned and set.
