- 1/2 cup honey
- 1/2 cup olive oil
- 1 egg
- 1 and 1/4 cups rolled oats
- 1 and 1/4 cups almond meal OR plain flour OR a mix (my favourite is 1 cup almond meal and 1/4 cup plain flour)
- 3/4 cup sesame seeds
- 1/2 cup sultanas (or other dried fruit)
Preheat oven to 180 degrees. Line two trays with baking paper.
Beat oil, honey and egg together then add all the rest.
If you use only almond meal, it needs to sit for a while to let the almond meal thicken a bit, otherwise the biscuits don’t hold together very well.
Press mix into a dessert spoon and place on a baking tray. They don’t spread much.
Bake for 10-12 minutes.
Store in airtight container or freeze.
