Tomato rice

  • 1 onion, chopped
  • 1 tsp turmeric
  • 1 cup basmati rice
  • 1 tin tomatoes
  • optional: chopped green beans, forzen edamame etc

Saute onion in olive oil, add salt & pepper
Add turmeric, stir to coat
Add rice, stir to coat
Add tomatoes
Add 2 cups water
Bring to an active simmer, cover and cook for 15 minutes – check occasionally, stir to prevent sticking, add a touch more water if necessary.
When rice is done, add optional veg, cover and leave on heat for 1-2 min to cook veg, then turn off heat and leave to stand, covered, 3-5min.
