- 5 eggs
- 1 cup self-raising flour
- 2 medium-large zucchini, grated
- 1 large onion, finely chopped
- 2 to 3 rashers bacon, finely chopped
- 1 cup cheese, grated
- 1/4 cup oil
Preheat oven to 170 degrees. Grease and line a 20x30cm tin.
Beat eggs in a large bowl until combined. Sift in the flour and mix until smooth.
Squeeze some of the liquid out of the grated zucchini. Add zucchini to the mix along with the onion, bacon, cheese and oil. Season with pepper. Pour into tin.
Bake 35-45mins until golden and set. Allow to cool slightly before cutting.
Variations: add or substitute veggies like corn kernels, grated carrot, shredded beans etc.
